En una cacerola a fuego muy lento, derretir el chocolate cortado en cuadritos y añadirlo a la mezcla anterior.&amp;nbsp;Añadir la harina mezclada con la sal y la levadura.&amp;nbsp;Mezclar hasta obtener una pasta homogénea.&amp;nbsp;Verter la pasta en un molde engrasado con mantequilla o aceite. Lo ideal es utilizar un molde de barro cuadrado ( 20 x 25).&amp;nbsp;Hornear durante 30 à 35 mn. El brownie no debe estar demasiado cocido. Dejar que se enfríe y espolvorear con azúcar glas. Aparte, hervir la leche y agregarle la maicena, previamente disuelta en un poco de leche fría. Cocinar a fuego mediano revolviendo continuamente durante 2 o 3 minutos. Sazonar con sal y retirar del fuego. Agregar mantequilla en trocitos y mezclar. Poner la carne molida cocida en un tazón, el huevo, el queso rallado y mezclar bien. Dejar enfriar y formar las croquetas tomando pequeñas porciones en las manos, darles la forma que desee, pasarlas por el huevo batido, pan rallado y colocarlas en una bandeja. Luego de este tiempo dejar enfriar la olla destapar y revisar, si está listo verificar la cantidad de agua que tiene, esto puede variar dependiendo de la cantidad de vapor que suelte la olla, al final debe quedar con dos tazas de agua aprox., si tiene más elimina el resto. Continúa cociendo el maíz ahora destapado, agrega la leche, canela, sal y azúcar, deja unos 30 minutos, moviendo de vez en cuando con una cuchara de madera, para que no se pegue y espese. Agrega la leche evaporada, deja unos 15 minutos más, cuando esté bien cremoso y espeso agregar la leche de coco, si no te gusta la leche de coco puedes agregar más leche evaporada, deja cocer unos minutos más, rectifica sal y azúcar y baja del fuego. Trocearlos en 6 partes. Calentar el aceite hasta temperatura apta para freir, preferiblemente alta. Echar los trozos, de ser posible todos juntos, aunque dependerá del recipiente con que se cuente. De no poder echarlos todos, fría una parte y la demás fríala mientras continúa con la preparación de los demás. Una vez estén dorados, sacarlos (pocos minutos, como promedio 3 ó 4). Mientras están calientes, echar 4 trozos de plátano en un mortero, 1 diente de ajo, 1/3 de la porción de chicharrón adquirida y sal al gusto. Opcionalmente, y para suavizar, se puede añadir la mitad de una cuchara pequeña de aceite, en este caso de oliva, aunque puede ser sustituida por una pequeña cantidad de mantequilla. Machacar la mezcla hasta conseguir una textura homogénea. El chicharrón debe mezclarse con el plátano. El ajo no debe quedar visible, por lo que debe ser machacado hasta convertirlo en una "pasta". Hacer lo mismo con los otros 8 trozos plátano frito. Es importante machacar con habilidad para que los demás trozos estén calientes. En la medida que se adquiere más habilidad el proceso de machacado se puede hacer más rápido, sin necesidad de repartir el proceso en tres. Realizar un corte en la parte superior, de forma de crear un bolsillo. Cuidado que no se les pase el cuchillo.&amp;nbsp;Rellenar con el jamón y queso, ayudarse con una cuchara. Es necesario también empujar con los dedos el relleno hacia abajo de forma que quede uniforme dentro de la pechuga.&amp;nbsp;Cerrar la pechuga por la apertura del bolsillo. Usar el escarbadientes.&amp;nbsp;Preparar para rebozar, un recipiente con harina, uno con los huevos batidos, condimentados con sal y pimienta, y un tercero con pan rallado.&amp;nbsp;Pasar la pechuga ya rellena y cerrada por la harina primero, luego el huevo y por último el pan rallado.&amp;nbsp;Guardar en la heladera como mínimo una hora para que se asiente el rebozado.&amp;nbsp;Freír en abundante aceite (que las tape el aceite ).
